Essentials of Raw Cuisine
This past weekend I participated in a raw food intensive offered by Matthew Kenney Culinary at M.A.K.E. in Santa Monica, the leaders in raw food culinary education. Since reading Matthew Kenney’s book “Cooked Raw” recently, I have become quite a fan of him and his work. A graduate of the French Culinary Institute, Matthew was a rising star who put down the meat cleaver, went raw and hasn’t looked back. With culinary schools in Santa Monica, Maine, Miami and now Thailand, he is on a mission to spread raw, vegan nutrition. Many classes are available online as well. Matthew is a partner in multiple plant based operations and in the past few weeks, has been a part of opening M.A.K.E. OUT in Culver City and in the next month or two, he’ll be opening Plant Food & Wine on Abbot Kinney in Venice CA. I can’t wait to dine there! His raw, vegan creations are beautiful, delicious and probably the healthiest cuisine you can have.
My class was on Saturday from 11am to 4pm and covered quite a lot. We started by making homemade almond milk, something I already do and love, a delicious green mango smoothie, a grapefruit fennel salad, zucchini cannelloni, a brownie and more. We then assembled and promptly devoured our dishes….so delicious!

I loved all the delicious creations, but even more I loved this class and surrounding myself with like-minded people. I will definitely be signing up for more. They offer several weekend intensives (I have my eyes on the Advance Raw Cuisine course and the Entertaining in the Raw course), but they also offer a full curriculum that, upon completion, will certify you as raw chef, I’m tempted.
