Vegan Queso
For those of you that say “I could never give up cheese,” I encourage you to give this a shot. It’s so good!
Like most of my recipe attempts, amounts given should be considered guidelines more than strict directions. Play around with quantities to suit your taste.
1 cup raw, overnight soaked cashews (I like to drain and soak again in warm water for about 10 minutes before making for a warm queso)
Juice of one lemon
2 or 3 tablespoons of nutritional yeast
A few squirts of Sriracha or more
Teaspoon of salt
Maybe a little cumin
1/4 cup warm water to soften the mix
Blend all ingredients in your Vitamix, Blendtec, blender or whatever you use. Blend until creamy, taste, adjust seasoning as needed, blend some more. I find I’m always adding Sriracha. I also tend to blend it for a long time as it will become super creamy. Enjoy with all your Mexican meals or on it’s own. Hope you like!
