Beans & Greens…again:)

I’ve written before about the many benefits of eating “beans & greens” which you can read here. I credit this learning to Derek Tresize, an accomplished vegan body builder, who engrained the term “beans & greens” into my vocabulary and, of course, my daily diet. Full of protein, nutrients, phytonutrients, antioxidants and more, you can’t go wrong eating beans and greens. Today, I had a great work out after a somewhat sporadic week and didn’t have a whole lot of time to make anything amazing so I opted to make something quick and easy that would still be protein packed and delicious. Being that this is so simple, I questioned whether I should even post this, but the truth is most all of us are busy (with work, family, work outs, life!), that having something easy, delicious and nutritious on hand can be a real blessing. So, pardon the remedial recipe, I’m posting anyway, hope you’ll try it out. Otherwise, you can always get your “beans & greens” fix at The Daily Kitchen & Bar where we have a bit more culinary version.
Open a can of beans (unless you’re more prepared than I and have already soaked and cooked) and rinse beans to help remove some of the sodium used in canning. Add a can full of water, some cumin, some pepper, maybe a squeeze of lime and cook on medium until thoroughly heated.
Use a steaming pot to steam up a big handful or two of kale, spinach or your favorite greens.
Bowl up, top with some sesame dressing (I used Annie’s Naturals) and enjoy.
Not only is this good for you, it’s surprisingly delicious!
