Black Bean, Quinoa & Corn Salad

Black bean, quinoa and corn salad

 

Yep, quinoa again. As you may recall from my last quinoa post, it’s super healthy and can be super delicious.  Just try it for yourself.
This on-the-fly recipe makes for a perfect last minute dinner or side dish.  It’s protein packed and quite tasty, if I say so myself.

Here’s what you need:
1 cup quinoa
2 cups water
1 tsp of olive oil
1 cup of frozen corn (or fresh if you have it)
1 can of black beans, rinsed
1/2 red bell pepper
1 bunch of cilantro (use less if you prefer)
2 limes
2 or 3 tablespoons of maple syrup depending on your desire for sweetness
dash of sea salt
2 tsp of cumin
Dash or two of ground black pepper

Here’s how you make it:
Bring rinsed quinoa and 2 cups of water to a boil, cover and simmer for 10-15 minutes or cook according to package directions. While that simmers, heat olive oil in a pot, add frozen corn, cover and cook for 5 minutes. Add black beans and heat all ingredients until warm. Season with cumin and black pepper. While that warms, make the dressing by whisking together juice of limes, maple syrup and sea salt. Fluff quinoa, add black bean and corn mixtures, mix in dressing. Top with diced red pepper and cilantro. Enjoy:)
