meaty meatless burgers
Most of my food post are and will be quick easy to make healthy meals, snacks and drinks. This one takes a bit more effort, but well worth it if you’re a fan of veggie burgers. Here’s the recipe…
Yield: 4 burgers
Using a food processor to individually blend ingredients then get your hands dirty and mix it all together (unless your food processor can handle mixing it all at once).
1 cup of raw sunflower seeds
1/2 cup of raw almonds
1/2 cup of walnuts
1/2 cup yellow sweet onion
1/2 cup cooked pinto beans (black beans would be fine too)
1/2 cup cooked brown rice (quinoa might be good too)
1/2 cup non dairy cheese (I use Daiya)
2 tablespoons of Braggs Amino Acids
2 tablespoons cup Soy Sauce or Tamari
1 tablespoon nutritional yeast
1 tsp fresh garlic
After blending, form patties. Then heat pan with small amount of olive oil, pan sear and cover to heat thoroughly over, probably 10 minutes each side. Add your favorite fixings and enjoy guilt free. I topped with spinach, avocado, organic ketchup and pickles of course:) and used Udi’s Gluten Free Bread. Yum!

Here is my slow cooker recipe for kale,
One large yellow onion
One clove garlic
Tbsp olive oil
Six russet potatoes peeled or not
Two cans cannellini beans rinsed
Large bag of kale, organic will do ,washed and chopped
Two boxes of organic vegetable broth
Tblsp of red pepper flakes
Salt and pepper
Sauté onion and garlic in olive oil, add to slow cooker first,top with potatoes and beans ,pour on the broth then pile on as much kale as you can squeeze in to your crock pot ( juice the rest!)
Cook all day while you are lying on the beach or cruising on your boat,or at work. Enjoy with your favorite bread.
I make this quite often and it last for days.
