Black Bean, Sweet Potato & Avocado Tacos
Don’t knock it till you try it. It’s pretty darn good… and good for you!
Here’s how to make 8 or so delicious vegan tacos:
1 package of your favorite corn tortillas
6 medium sized sweet potatoes or yams
1 tablespoon of olive oil
S&P to taste
small wedge of Purple Cabbage (about a cup shredded)
3 limes
2 tsp brown sugar
2 avocados
1 small tomato
1/4 red onion
handful of cilantro
pinch of cayenne pepper (optional)
cut sweet potatoes into 1/4″ cubes
toss with a tablespoon of olive oil and a pinch of salt
bake in a preheated 400 degree oven for about 45 minutes
Meanwhile shred cabbage, squeeze 2 limes over cabbage, add S&P, 2 tsp of brown sugar. Toss and let marinade.
Cook beans on stovetop, add cumin and S&P and let simmer until potatoes are done.
Cut avocados, tomato, red onion, cilantro, juice from one lime and mix together. Add S&P (and cayenne pepper if you like a little kick.)
Assemble tacos: warm tortilla as you see fit, add beans, sweet potatoes, avocado mixture, cabbage, then top/garnish with extra cilantro. Enjoy your vegan fiesta!
