Hearty Lentil Soup
- olive oil
- 3 celery stalks
- 2 carrots
- 1 sweet yellow onion
- 3 cloves of garlic
- can of cut or crushed tomatoes
- 6 cups of veggie stock (I like “Better Than Bouillon” vegetable base)
- 2 cups water
- 2 cups green lentils
Heat olive oil over medium high heat, add onions and garlic till translucent, then add carrots and celery and heat until slightly tender. Add spices and cook until fragrant. Add veggie stock, can of tomatoes, water and lentils. Bring to boil, then simmer for an hour.
Easy and delicious and good all week.
