Lentil Salad

I strive to make foods that are easy to prepare, healthy and free of animal products.  This protein rich meal is perfect for anytime of the day.

1lb of green lentils

lots of red grapes (@2 cups)

1 red bell pepper

1 cucumber (peeled, deseeded)

2 lemons for zest and juice.

small amount of olive oil

S&P

 

Boil lentils for about 20 minutes or until tender.  Drain, let cool for a few minutes.  Add sliced grapes, chopped red pepper, chopped cucumber and lemon zest to lentils.  For dressing mix juice of two lemons with a small spoonful of olive oil, mix well.  Pour over lentils.  Stir concoction well. Season with S&P.  Enjoy.  For even more protein, consider topping with almonds or walnuts.  Stores well for future meals and snacks. I had some for brunch and now heading to the gym, but already looking forward to my post work out lentils.  Hope you’ll try and enjoy as much as I do.  It’s feel good food!
